Here’s our tried and true recipe!

Easy Chili

Serves 6-8, 25 Minute Meal

Ingredients:

Pasta and Chili Mix (included)

3 (15 oz.) cans of beans rinsed and drained (suggested: kidney, pinto and black)

1 medium onion, chipped

1 green pepper, chopped

2 cloves of garlic, minced (or 2 tsp of pre-minced garlic)

1 (28 oz.) can of diced tomatoes, undrained

1/3 cup tomato paste

1 lb. ground beef, browned and drained

Directions:

1)      Cook pasta for 6-8 minutes in gently boiling water (salt optional). Drain, rinse with cold water, toss with olive oil and set aside for later.

2)      In a large pot, combine all other ingredients with 3 cups water. Add seasoning packet and bring to a boil. Reduce heat and cook for 25 minutes over a gentle boil.

3)      Serve chili over desired amount of pasta. Garnish with shredded cheddar cheese, sour cream, or chopped green onions.

If using a crockpot: Combine all of the ingredients, except pasta and cook on high for 4-6 hours.

Meat Lovers Option: Add 1 lb. Kielbasa sausage, cooked with beef.

Low-fat Option: Substitute ground chicken or turkey for beef.

Vegetarian Option: Use tempeh or tofu crumbles instead of meat.

Garnishes (use any or all): Shredded cheddar cheese, sour cream, chopped green onions, hot sauce or crushed red pepper flakes.
